Cardoon Cynara cardunculas 4ft x 4ft Cardoon is lesser-known relative of the artichoke and is considered a delicacy in Mediterranean cuisine. It grows into a stately thistle-like plant, but unlike artichokes you eat the artichoke flavored stems, not the flower buds.
