Known also a Jersey Kale and Walking stick kale, large collard greens are consumed raw in juices, and as cooked greens. Stalks harvested and dried for walking sticks. Amazing perennial vegetable. Per 67g: 7g carbohydrate, 2g protein. A good source of Dietary Fiber, Protein, Thiamin, Riboflavin, Folate, Iron, Magnesium and Phosphorus, and a very good source of Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Calcium, Potassium, Copper and Manganese.
