Sunchoke or Jerusalem artichoke Helianthus tuberosa 6ft x 2ft Sunchokes (aka “fartichokes”) are very rich in inulin, a carbohydrate linked with good intestinal health due to its prebiotic (bacteria promoting) properties. Bake them like a potato. Makes a great temporary hedge with yellow sunflowers. Die back perennial. A good source of Thiamin, Phosphorus and Potassium, and a very good source of Iron.
