Botanic Name Botanic Name Dimension H X W Description Nutritional Advantage
Perpetual Spinach Beta vulgaris 2ft x 2ft Not spinach at all, actually in the chard family, but because it still keeps giving healthy green leaves during the heat when most spinach has gone to seed it does seem perpetual or never ending.  It is a biennial however and will go to seed the next year.  Till then enjoy shiny green leaves that taste similar to chard.  Pick young leaves for fresh salad or blanch older leaves. It’s packed with a large variety of nutrients, including: Vitamin K, Vitamin A, Vitamin C, Magnesium, Manganese, Potassium, Iron and riboflavin.Contains dietary fiber and has other essential trace elements including Copper, Calcium, Phosphorus and Sodium. One cup will supply about one fifth of your daily Vitamin C requirements.
